- 1 box spanish rice
- 1 red pepper, chopped
- 1 bunch green onions
- 1 can black beans, drained
- ¼ head of lettuce, chopped
- Cook rice according to directions
- Toss all these ingredients in a large bowl
- Toss with dressing :
- /4 cup olive oil
- /2 tbls red wine vinegar, or your favorite kind
- /2 tbls orange juice
- /8 tsp. cumin
- /8 tsp ground coriander
- tsp tequilla ( optional - gives it a bit of a kick)
- Serves 4-6 as a salad, 2-3 as a main dish
