Ingredients
  • 1 box spanish rice
  • 1 red pepper, chopped
  • 1 bunch green onions
  • 1 can black beans, drained
  • ¼ head of lettuce, chopped
Instructions
  1. Cook rice according to directions
  2. Toss all these ingredients in a large bowl
  3. Toss with dressing :
  4. /4 cup olive oil
  5. /2 tbls red wine vinegar, or your favorite kind
  6. /2 tbls orange juice
  7. /8 tsp. cumin
  8. /8 tsp ground coriander
  9. tsp tequilla ( optional - gives it a bit of a kick)
  10. Serves 4-6 as a salad, 2-3 as a main dish
